Bairrada

Bairrada lies close to the Atlantic on chalky clay, and that cool climate makes two things possible that are difficult elsewhere in Portugal: taut sparkling wine and reds whose acidity lasts for decades. The Baga grape long had a difficult reputation — high acidity, firm tannins, patience required — but in the right hands it is one of the most interesting grapes in the country. The espumantes from this region are made by the same method as in Champagne. From us, among others Filipa Pato, Quinta das Bageiras and Caves São João.
