Domaine de la Luolle: biodynamic Givry and Mercurey from the Côte Chalonnaise

Two newcomers who changed course, and wines of remarkably pure freshness.

In Moroges, a village of some six hundred inhabitants just west of Givry and Chalon-sur-Saône, Sandrine and Olivier Dovergne have been making wine since 2017. Not in a family estate with generations of history, but in an old house they converted into a winery themselves.

Their vineyards lie mostly in and around Givry, plus one plot in Mercurey. Today the estate covers about nine hectares, fully certified biodynamic (Demeter).

Domaine de la Luolle is available in Belgium from Wijnhuis Jeuris. We import the wines directly and deliver throughout Belgium.

From Lille, across the Atlantic, to Burgundy

Sandrine was a teacher, Olivier an engineer. For years wine was their passion alongside work, with tastings and wine clubs near Lille. Halfway through their careers they took a break and crossed the Atlantic by sailing boat with their family, French wine on board.

After that voyage they decided to take the plunge. They found the house La Luolle, built a cuverie, a storage area and a space for the crémants, and took over vineyards that had never been farmed other than organically.

That fresh outlook shows in the wines: they seek not power but precision, fruit and drinkability.

Biodynamic from the start

The Dovergnes chose biodynamics straight away. They started with a third of the estate as a trial; today everything is Demeter certified. The reason is simple: the wines of colleagues already working biodynamically simply appealed to them more.

In Givry, Les Plants sont Fleuris and Champ Pourot lie close together, with vines averaging fifty to fifty-five years old. Champ Pourot is higher and stonier. Its name is said to refer to a "field of stones" along an old Roman road.

Between Givry and Mercurey

From Côte Chalonnaise to Mercurey

The red Bourgogne Côte Chalonnaise wines La Coulée Douce and Les Oiseaux Rares are both blends of three plots in Saint-Désert and Rosey. Each plot brings something different: fruit, spice or structure. La Coulée Douce is about fruit and softness; for Les Oiseaux Rares about 30 percent of the bunches go into the vat whole. The name refers to a hedge full of birds next to one of the plots.

The white Écume de Terre earned a coup de cœur in the Guide Hachette 2026 with the 2022 vintage. In Givry, Les Plants sont Fleuris spends nine months in barrel, Champ Pourot at least eleven.

Le Balcon is a tiny Mercurey plot of barely 0.30 hectares, just above the premier cru Clos du Roi. Very stony and worked entirely by hand. According to Olivier it reaches premier cru level, even though it fell outside the classification because it was planted later.
