On the 12 hectares of the estate the growing is sustainable: chemical treatments are limited and only carried out when needed. Work in the vineyard is adapted to the needs of each plot. Some plots are ploughed with respect for the environment and the terroir, which makes the soil more alive: micro-organisms and insects multiply there and enrich it. Well-judged soil work gives the wine balance and drinkability, and lends it a fine tension. | Vinification | The harvest is by hand, with sorting in the vineyard. The grapes are then carried to the winery on conveyor belts. There they are destemmed and moved by belt into open vats, where alcoholic fermentation takes place with indigenous yeasts over 10 to 20 days, with regular punching down and pumping over. Once alcoholic fermentation is finished, the wine is moved by hand from the vat to the press, where the pressing is gentle and careful. After a rest of 24 to 48 hours the wines are aged in oak barrels, where malolactic fermentation takes place. Our barrels are generally medium-toasted, with a share of new oak that varies between 10 and 30 %, depending on the appellation. |
